Executive Chef Dolphy Lobo

With over two decades of international experience, Chef Dolphy Lobo leads the culinary team at Pullman Cairns International. His career spans luxury kitchens across India, Morocco, Saudi Arabia and Australia, including Taj Mahal Palace and Wasabi by Morimoto. Combining global techniques with a farm-to-table philosophy, he celebrates Tropical North Queensland’s seasonal produce, fresh seafood and tropical flavours. He oversees the hotel’s restaurants, bars and event dining, bringing creativity and care to every menu. His approach connects people with the region through thoughtful dishes that let quality ingredients shine.

Pastry Chef Ivan Cancilini

Italian-born Chef Ivan Canclini brings over 12 years of experience across luxury hotels and Michelin-starred restaurants in Italy, Spain, Denmark and Australia. His career includes Belmond Hotel Splendido and Milan’s Hotel Excelsior Gallia. Combining Italian craftsmanship with contemporary European techniques, Ivan creates refined desserts guided by seasonality and locally sourced ingredients. His style balances flavours and textures, drawing on French, Spanish and Nordic influences. In Tropical North Queensland, he finds inspiration in tropical produce, bringing a fresh regional perspective to his pastry creations.
