Celebrate Easter in style with our Easter Seafood Buffet, a decadent feast showcasing the freshest ocean flavours and seasonal favourites in a family-friendly setting.

Begin with artisan charcuterie and antipasto boards, warm Easter breads including brioche and hot cross buns, and a selection of salads, from five grain salad with mango and blue swimmer crab to watermelon with burrata and aged balsamic.

The highlight of the day is our abundant Seafood Station, featuring freshly shucked Tasmanian oysters, Far North Queensland tiger prawns, blue mussels, sand crab and beetroot-cured salmon – a true celebration of Australia’s coastal bounty.

From the hot buffet, enjoy macadamia-crusted barramundi with finger lime beurre blanc, mustard and pink peppercorn crusted striploin, classic pork shoulder with crackling, and comforting seasonal favourites.

End on a sweet note at our spectacular Easter Dessert Station, complete with chocolate mousse gateaux, dark chocolate flourless torte, carrot cake, Easter eggs and a flowing chocolate fountain. Little ones will love the Pullman ice cream cart.
